Cancun

Let me tell you a little bit about the my Christmas present from Mike this year.  In my previous post, I hinted that Mike had ulterior motives for spending Christmas with our families in Utah.   Mike and Shaun had been planning a secret vacation for Bethany and I since October.  We met up with the Sorensen's for dinner at Tucanos in SLC a couple days before Christmas and they had it arranged for the waitress to bring us presents with details about a much needed vacation to Mexico.  They had even secretly packed tennis rackets, and summer/beachwear for us...  But I still did a LITTLE shopping due to Mike's lack of selection.

Our five days spent in Cancun were full of mostly relaxing at the beach and pool and dining out at night.

Here are some of our other highlights.

-Sleeping in/Staying up late - The late nights were mostly caused by movies and crazy games of Farkel.

-Doubles Tennis - Since Shaun was all state in High-School, you can imagine how he dominated (we wanted to thank him for playing down to our level)

-Pool time - Thanks to the girls modeling swim wear poolside, Bethany and I came home with matching swimsuits... so did Mike and Shaun (that's a different story.)

-Beach time -  It was nice for me to have Bethany there who was content to read and lay out in the sun for hours while Mike had Shaun to go body surfing and boogie boarding with.

-Manzanitas/Limonadas - We were both introduced to these wonderful drinks that seemed to get better and better as the vacation progressed.  Mike especially loved the Manzanitas which resembles carbonated apple juice.

-Dining - We tried every type of restaurant we could.  Our first night, we ate at a Japanese Restaurant at our hotel.  I was introduced to shrimp tempura... which I loved.  Second night, we went to an Argentenian Steak house which was also fabulous.  For our third night, we took a taxi to downtown Cancun for some authentic Mexican food and Mariachi bands.

-My favorite dinner was a memorable night of fine dining and dancing at the Ritz-Carlton.  Yes!  Mike actually danced with me.  It was probably more because he felt like he needed to since the pianist overheard him request "Fly Me to the Moon" by Frank Sinatra.

Our five days spent there were perfectly spent relaxing with each other and good friends in warm weather... a nice break away from the snow and cold.  We are now energized for the rest of this long winter.

I'm so thankful for my husband's insightfulness to surprise me at my most needed moments.

Looks absolutely divine.

I'm just excited to know that there is another couple of families out in the world who know what farkel is. I thought my mom made that name up but now I see it is totally legit.
